My first iPod was a third generation (with the 4 touch buttons) and had a 15 gig hard drive in it. It worked great so I decided to "mod" it untill it became even better.
The first thing I did was modify the inline remote. I did not like how the remote made the ear phone chord super long. I wanted to put the remote down my sleeve and in my hand while the headphones went up towards my head. This would be useful for skiing as my helmet is equipted with built in headphones. Having the remote in my hand all the time instead of hanging from my neck seemed like a much better idea. I took apart the remote, figured out which 3 wires I needed to use. Then I spliced in a headphone jack right above where the remote pluged into the ipod. Now I didn't have to plug the headphones into the other end of the remote.
My second mod happened by accident. I left my iPod in the car on a cold day and the hard drive crashed. I opened it up after trying everything to get it to reset. While it was open I took a few pics before putting it back together and shipping it out. I sent it to iPod Mods and they swapped out the 15 gig hard drive for a new 20 gig hard drive. I would have done it my self but I don't have the tools to format the drive etc.
My third mod was mainly cosmetic. I drew and cut out a flame pattern on a piece of sticker paper. I put it on the back of the iPod over the now well scratched metal. I picked up a fine sanding sponge for like $0.70 and brushed over the back a few thousand times untill I had a brushed metal effect. Then when I peeled off the sticker everything that it covered remained polished leaving the flame design on the back.
Now I have a 4gig black iPod nano and I am sure it will get some mods shortly.
